Love Hina made me think about relationships XD
As did Chobit, but that's a little different...
Tsubasa was a rather large influence, as was the original (and the most kickass) Cardcaptor Sakura.
Also in the list are Akira, Rurouni Kenshin, Hikaru no Go, Fullmetal Alchemist, and Gantz.

Uh...

Excel Saga brought out my very genki insane side. I'm usually seen as "cold" or the "ice queen" (probably because I'm a SCORPIO), but anime/manga in general has lightened me up a lot.

I'm going to say Death Note and Fullmetal Alchemist.

Death Note because my occasional thoughts of "I wish they'd just burn and die....." were brought into perspective and it made me look like Light at the end of the series.

And Fullmetal Alchemist's equivalent exchange made me realize that work and effort will lead to a reward.

I couldn't possibly say in words what I learn from these things, but just about any book/movie/anime/manga/anything I read/watch makes me think about something. The biggest impact was probably a webcomic made by a conservative christian republican. It taught me that not all republicans are idiots, just the ones the whole world see. But that goes for the publically visible democrats too. In a way I was slightly racist against the south and republicans until I read this. (I think it was started from the US reelecting Bush, but it may have gone back further.)

I'd say that Evangelion made me question reality. The first encounter I had with it was watching the end of the series at a party, not entirely knowing what it was about or anything.

LOL. Yes, I must agree about the whole FLCL thing. XD

Oh, and, cowboy bebop ALWAYS changes the way I think when I watch it. -__-; Not in a profound or philosophic way like Haruhi does, but in a very simple way. After watching it, I always obsess with hacking or karate. (Being as I was in Gojuu Ryuu for a long time and have been a whitehat for a very long time. XD)

Oh, also, anime about detective things make me think differently. I get so used to piecing observations together that I end up doing it in the real world. For instance, I find myself looking at peoples hands/shirt cuffs/knees and body language a lot more. (Anybody who has read any Sherlock Holmes knows why I would do so. Wink )

OMG, WHY DIDN'T I THINK OF THAT?! That anime freakin' changed me! I don't think I'd be into rock nearly as much as I am without that anime. Not to mention the deep love I gained for so much more anime from that, as well as conditioning me for more sexual anime series. X3 Of course, there's also the whole out look on what people think is normal and how kids can be smarter than adults. There's so much I could probably write a paper on it if I wanted to. x3

Fairy Tail and Full Metal Alchemist the most, for me.

FMA for pretty much the same reasons as Corey. All efforts bring about some sort of change in some way, shape or form. If done right, one can yield great rewards for themselves, others, or both.

Fairy Tail was mostly the "Give up and you're scum" which kinda ties into the FMA for me. If something seemed to be going the wrong way, I would simply stop. Why would I bother doing something that would ultimately end up bad? But that isn't always the case. There's always that chance of being able to turn a situation around given enough persistence and guts. I've had that mentality for a while, but Fairy Tail kinda bolstered it.
